I recently met a friend who has lost over 35lbs over the last 5 months. He said he achieved that purely by eating healthy. And more specifically, his diet secret is eating “Quinoa“!
Quinoa grain is actually more like a vegetable than a grain. Quinoa originated in South America and has been used as a diet staple for centuries. Quinoa is a close relative of spinach, kale and Swiss chard. It is rich in protein, vitamins and minerals, and it leaves you feeling satisfied, not deprived. This is why quinoa is becoming popular as a grain alternative and weight loss food.
There are many ways to cook yummy “quinoa”. I personally have tried multiple recipes at home, and I’d love to share the one our family (kids especially) love the most!
Ingredients: (for 12 regular-sized muffin tins)
2 cups cooked quinoa (about 3/4 cup uncooked)
2 egg whites
1 cup broccoli, chopped
1 cup shredded sharp cheddar cheese or american cheese
1/2 cup diced bacon
1/2 cup corns and green beans
salt & pepper
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix to combine. Spoon mixture to the top of each cup. Bake for 25-30 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing from the muffin tin.
You can enjoy it for breakfast, lunch, or dinner – hot or cold. My kids even pack them in their lunch boxes. It’s a great party food as well~!
